Black, Oolong, & Dark Teas

A growing number of Japanese tea farmers & producers offer black & oolong teas made with Japanese tea plants. They tend to be light-bodied for unsweetened tea.

What is the difference between black, oolong and dark teas? While different cultivars (cultivated varieties...in wine you think of merlot, pinot noir, etc.) of the tea plant (camellia sinensis) maybe suited toward different teas, the tea type is determined by the processing method.
